Mango turnovers- or useful tips for Aam papad

The girls came down this weekend- brought mom down as well. And of course we had to take mom to the Buford's Farmer Market. And the India stories and smuggled spices only led to a delicious Goan meal.

This led to a sampling of other Goan goodies. I had some Aam papad and didn't exactly know what to do with it... I then thought I could make some fruit turnovers using the fruit leather...


Aam papad is mango concentrate or pulp mixed with sugar and then sun dried.

I thought we could peel off the layers of mango and use some sort of cream cheese filling to make for the party.


So we thawed out store bought puff pastries, they were in squares. Pre heated the oven at 375 F.

I whipped up 8oz of cream cheese with about 1/4 cup of powdered sugar and about 2 tsp of ground ginger.

Placed 1 tbsp of cream cheese filling on one side of the square, placed a strip of mango papad on top of the filling and folded the dough over to seal it.

Bakes for about 20-30 min till golden brown- delicious!! They were a hit! We cut them in thirds so that there would be enough for everyone. Made about 24 small squares.

Green Grunge!

Miso Cod- used white miso, mirin, rice vinegar, oil, ginger, and a bit of soy- i think next time a wee bit more soy to cut the sweetness but it was really nicely flavored. Bakes at 400 F for 15 min. 


Apparently Nobu marinates the pieces of cod in the miso mix for 2-3 days so that the flavour really steeps in... perhaps will do that the next time... 




Served the cod over a wasabi hash of edamame, corn, carrot, purple yam, and white potato. The veggies were good- next time will try using horseradish instead of wasabi power for an extra kick! Also served baby bok choy steamed in mirin, chicken broth, and ginger... yum!


And to finish it off- I attempted chocolate molten lava cakes but I accidentally left the cakes in the oven for 2 extra minutes so they didn't turn out as gooey as I'd like them to be- doh!

Came out of the oven beautifully! Was able to turn the cakes out without any breaking...just was not molten enough!

Chocolate Molten Lava Cake (well really... flour- less chocolate cake now) served with raspberry gelato- needed a sprig of basil to complete the garnish...

But Melissa and I had a good time cooking :)

Birthday feast!

Have decided to expand the recipe and foodie collection to...em...well...all delicious food, not just Goan. Still recovering from jet lag and so wanted to a bit a wee bit lazy this evening... Goan food might take a lot more brain power than I have right now... 

so instead- will attempt Miso baked Cod, Wasabi potatoes, and Chocolate Molten Lava Cake with Raspberry Gelato... that is if I don't succumb to sleep by 5pm...

And so I couldn't resist trying the Goan recipes- trying to alter them to fit my life in Atlanta...where would I get the ingredients...I started collecting recipes from my family with the hopes of recreating them here...and then using my friends as test rats :)

I also want to recreate some Goan recipes- perhaps even modernize them to suite a healthier lifestyle...we'll see how this goes.
