The girls came down this weekend- brought mom down as well. And of course we had to take mom to the Buford's Farmer Market. And the India stories and smuggled spices only led to a delicious Goan meal.
This led to a sampling of other Goan goodies. I had some Aam papad and didn't exactly know what to do with it... I then thought I could make some fruit turnovers using the fruit leather...
Aam papad is mango concentrate or pulp mixed with sugar and then sun dried.
I thought we could peel off the layers of mango and use some sort of cream cheese filling to make for the party.
So we thawed out store bought puff pastries, they were in squares. Pre heated the oven at 375 F.
I whipped up 8oz of cream cheese with about 1/4 cup of powdered sugar and about 2 tsp of ground ginger.
Placed 1 tbsp of cream cheese filling on one side of the square, placed a strip of mango papad on top of the filling and folded the dough over to seal it.
Bakes for about 20-30 min till golden brown- delicious!! They were a hit! We cut them in thirds so that there would be enough for everyone. Made about 24 small squares.
