in the spirit of Cinco de Mayo

After visiting Assi with Gwen and Megan- we decided to make fish tacos... I've been talking about cooking Mexican food for a while and just never got around to it...
on the menu:
Fish tacos- Halibut and shrimp
Jicama and Watermelon salad
Fried Hawaiian Plantains
Gaucamole
Mango Salsa
Mango Salsa:
One ripe-ish mango- it needs to be a little tart
One tomato- seeded
One jalapeno
Half red bell pepper
1/4 cup cilantro
Chop all thee above, toss with lime juice, season with salt, and chili- done!

Jicama Watermelon salad:
Peel and slicc jicama into matchstick size pieces
Same with the watermelon
Mix both with lime juice and chili powder




Halibut and Shrimp
Marinate in desired spices- I used Sonoran spice rub that Kevin gave me from Arizona- its amazing! Its a southwestern herb blend of orange peel, garlic, black tea, paprika and others... I just pan sautéed the fish till cooked.



Meg's amazing Guac-
Avocado, chopped tomato, lime juice, cilantro, cumin  and salt! delicious!

I just chopped  up the Hawaiian plantain and pan sautéed it in Agave nectar... pretty simple

Warmed up some awesome homemade corn tortillas- purchased from Assi...

and ta da...

 A pretty tasty meal  really...
